Research estimates that between one-third and one-half of fresh produce rots in fields or gets mixed in dumpsters instead of bowls.  An emphasis on blemish-free fruits and vegetables means much of what’s grown never makes it past the grocery store (or is even displayed at all).  The lost value tallies in the billions, to say nothing about transport and disposal costs.  The “ugly food movement,” rooted in the United Kingdom, is out to peel back the waste by embracing less-than-perfect fresh items normally left at the farm or rejected by retailers.  Not-for-profits and food shelves stand to benefit in the process.  Read More.
